燕影金蔬主料:发好的燕窝50克,菜心12棵。配料:胡萝卜250克,熟火腿150克,水冬菇150克。调料:精盐、绍酒、淀粉各适量,高汤100克。做法:1.将胡萝卜削成直径4分的圆球,共削12个。2.将火腿切成燕毛状的薄片,共12片。3.将菜心洗净,头部切一个十字花纹,用温油略微炸一下。再将菜心放入盛有高汤的锅里,加盐炖至九成熟。4.将高汤煮沸,放入燕窝,氽透。5.将菜心入盘码成燕身及燕头;将火腿片、...
