主料:鸡脯肉750克,水发干贝50克配料:鲜豌豆50克,鸡蛋清5个调料:料酒15克精盐2克清汤500克湿玉米粉35克熟猪油500克(约耗40克)鸡油10克做法:1.用水将鸡脯肉洗净,用刀片去皮筋,放在猪肉皮上,用刀背砸成茸,挑去细筋,放入碗中,加入料酒、精盐、清汤各少许,加入10克玉米粉,再放入鸡蛋清搅拌均匀,调成稀鸡茸糊。2.锅中注入开水,放入洗净的鲜豌豆,上火氽一遍,捞出后放入清水中过凉。将干...
