茄汁脆鳝主料:冬菇125克配料:青豆10克冬笋15克调料:葱、姜、蕃茄酱、糖、醋、盐、料酒、水淀粉各适量。制作方法:1.将冬菇切成2厘米宽、3厘米长的片,将冬笋切成1毫米见方的丁,将葱、姜切成末。2.将冬菇水份挤干,用水淀粉把冬菇挂上糊。3.在炒锅里放油,将油烧至150℃时,下挂糊的冬菇,炸至脆硬,倒入漏勺中,留少许底油,下入葱、姜末、蕃茄酱,炒透,下料酒、盐、糖、醋,炒匀,再用水淀粉勾芡。4.将...
